Brown Sugar Cinnamon Bars



I am so proud of myself. I found this recipe a while ago and really wanted to make these, but wanted to make them gluten free. They ended up tasting very good!!! This was my first attempt at making something that had gluten in it, gluten free and it worked out great. My husband and I sat down with a cup of coffee and these little bars. If you don't have any gluten intolerances you could also make these with regular all purpose flour and omit the xanthan gum. They reminded me of a spiced cake, but yummier.. Enjoy!





INGREDIENTS

1 cup butter, softened
2 cups brown sugar
2 eggs
1 tablespoon vanilla extract
2 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 2/3 cup gluten free all purpose flour
1 1/4 teaspoon Xanthan Gum

Cinnamon Sugar Topping
2 tablespoon sugar
2 teaspoon cinnamon

DIRECTIONS

Pre-heat oven to 350 degrees F. In a large bowl, cream together butter and brown sugar until light and fluffy. Add eggs one at a time, making sure to incorporate them well. Add vanilla and beat until smooth.

Add baking powder, salt, cinnamon, nutmeg and flour to the butter/brown sugar mixture and stir until just combined. Grease a 9x13 baking dish and line with parchment paper. Pour batter into baking dish and spread evenly with a spatula.

In a small bowl mix cinnamon, sugar and sprinkle evenly over the cookie batter. Bake cookie bars for 30-35 minutes or until cookies are set in the middle. Cool completely until cutting into bars.
